Pancakes, Hills and the Sunday Slob.

I had an awesome Sunday. Sundays are just generally great, a) because there are pancakes involved, b) because it means a hill run, and c) because it means being a Sunday Slob.

a) Pancake Sunday!! Did you know I am officially the worst pancake flipper in the world? Case in point:


Course I scraped it outta the pan and ate it anyway! 😉

Katie’s Red Velvet pancakes (go check hers out- they’re delish and look so much better the way she made them!!), sans the red part because I had no food colouring…


Topped with coconut butter and choccie chips, with PB+J for dippage 🙂

The Katie obsession continued that evening with yet another Banana Bread Muffin For One, topped with raw chocolate pudding as frosting and shredded coconut:DSC06900

Sorry for the Katie obsession. I am not joking when I say you HAVE to try these and her recipes in general because they will send you into a FOODGASMIC COMA.


The Sunday Pancake theme was carried over to dinner, with a Triple Chickpea plate.DSC06899

Socca (like a chickpea pancake), topped with spinach, nooch and Angela’s delicious crispy chickpea bites, with a side of roasted red pepper hummus. Gotta love those chickpeas!! Open-mouthed smile


b) Hill run!! I have a love-hate relationship with hills, because they totally kick my butt! I did manage to up the speed of the 30 min pre-set hill workout this week slightly, with the first half in 8.00min/mile and the second half in 7.47 min/mileyahooo! DSC06872

7% inline is no joke, and equalled a very sweaty beast afterwards! Chilled out on the elliptical for about half an hour afterwards with Paula Radcliffe.DSC06448


Her book is amazing. If you are interested in running, I really recommend it! Open-mouthed smile


c) Sunday Slob

Slob Example #1: A lie in.DSC06915 When you have pancakes to make, and a church service to get to, a lie-in means sacrifices. And that meant no hair-brushing, no make-up, and not even changing out of my PJ top. Priorities people!!


Shhh...they'll never know...

Slob Example #2: Work procrastination. I settled down with the laptop and vegan instant soup-in-a-mug to tackle some work, and then doing no work at all, and instead bookmarking 1000 more recipes to make.DSC06669

This happens every time. Bad Emma!!

Slob Example #3: Cereal munching straight from the packet. I couldn’t be bothered to make a proper snack after my workout, so the cereal and I got well acquainted on my bed, and got caught in the act by my momma.

So now I’m off to finish possibly the only productive thing I did all day: washing these bad boys after yesterday’s run.DSC06890

Obviously the most efficient way to do it is in the bathtub. You have to get in there too of course.DSC06883

That’s how I spend my Sundays.

    My pancake flipping totally failed today too! But as long as they taste good, that’s what matters, right?

  2. haha! You’re such a goof. That pancake flop made me laugh. My Sunday was spent by the beach :D. Nothin’ better. I’m so totally looking forward to trying out new recipes for the blog this week. Booya for PJ’s at church! I’ve done that once in the Summer…I went to sleep in (clean) workout clothes and then just went to church in them haha.

  4. Yay hills! I just did a post about hills yesterday. Once I finish my book soon, I need another running book – I’ll look for Paula’s book! I tend to switch between reading fiction books and then nutrition/fitness books. I’m looking forward to being done the next two weeks (bad mentality I know), because I have 4 exams coming up.

  7. I totally wore my Pj’s to church too!! I’m so guilty of that, but if no one knows it’s just our little secret right!?! Ahh I seriously love your posts! Your blog has become one of my absolute favorites because you always manage to put a smile on my face and I’m genuinely disappointed when the post is over! Hah! Hope that makes your day really special to hear that anyway:) I seriously need to make Katie’s muffins now…I already have them bookmarked and I’ve got all the ingredients..

    and the work thing – same here!! I know it’s bad, but I always end up going to blogs and bookmarking recipes…but on the other hand, I think it’s a nice way to balance school with what you love / your hobbies 🙂

    I’m pretty sure I’m guilty of all those slob activities too… especially the bookmarking recipes instead of working.

    I’m definitely reading that book when I finally get the chance to read for enjoyment again. I’ve been reading about nothing but whales lately for a research report. It’s getting old.

  18. I’m loving my coconut pancakes at the moment! Those red velvet ones look amazing. I love lazy sundays, I usually spend some time in the kitchen batch cooking meals for the rest of the week!

  21. Hooray for lazy sundays! Although I really do not like sitting about in my PJ’s- never have! Even if I am lounging about I like to be dressed. I love pancakes, but I am the worlds most awful flipper (I think you have to have the confidence and just do it, which I dont) and so I tend to make mini ones which I can flip easily. Nice work on the hills too- you are a running machine 🙂

  22. PJs to church?! You’ve become my new hero – I do church in the evening and sometimes I wish I went in my PJs (it’s be so much comfier!) Random question but what cereal is that/where did you manage to find vegan cup a soups?!

  23. Hah, we seem to have the same idea of a lie in ~ 7am is a late start for me!

    I am a Sunday Slob too: I clean my Asics in the bath (put them in the washing machine once and the poor things never recovered. Had to buy a new pair!) and most certainly eat things from the packet or jar. Love that photo of you 🙂

    After your review I have bought Paula Radcliffe’s book from Amazon and am eagerly awaiting it’s arrival!

    One can never have too many chickpeas ~ socca are actually the only pancakes I’ve tried that I really like!
