Okay, so there’s one thing that you should all know about me: I’m a child at heart.


I love having fun and playing about with my breakfasts. This means fun size comparisons…

I like summer a lot more than I like winter.  It means I can wear cool hats and cute sundresses

…and it means I can bake foods with lemon in them! Lemons=summer. So I kidded myself that it was sunny and 30C outside by making some sunny lemon drizzle muffins.DSC06994

Lemon Drizzle Muffins (adapted from Vegan with a Vengeance)

These muffins have only a few spoonfuls of sugar and oil, and are made with wholegrain spelt flour, but taste deliciously sweet and are light and fluffy…

Makes approx 9 muffins

  • 200g/7oz spelt flour (you can use all-purpose if you prefer)
  • 4 tbsp sugar or substitute
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 5 tbsp coconut oil (or other oil, or you could try subbing applesauce for a low-fat option, but I like my healthy fats!)
  • 175ml/6 fl oz milk (I used rice)
  • 175g soy yoghurt
  • 1 tsp vanilla extract
  • Zest from 2 large unwaxed lemons
    For the drizzle:
  • 40ml lemon juice
  • 2 tbsp sugar or substitute
  • 1/2 tsp finely grated lemon zest
  1. Preheat oven to 200C/400F.
  2. Sift together dry ingredients (flour, sugar, baking powder and salt) into a large bowl. In another bowl whisk together the oil, milk, yoghurt and vanilla, then stir in the lemon zest.
  3. Spray/grease a muffin tin. Fill each cup about 2/3 full, depending on how big you want your muffins. Bake for 20-25 mins, then remove from oven.
  4. Combine all the drizzle ingredients in a saucepan over a low heat until the sugar has dissolved. Then brush over muffins with a pastry brush.
  5. Enjoy!!

Kids love muffins, and so do I.

I love Disney more than life itself. When I met up with a friend at the cinema today, the choice was out of a whole list of serious movies, or the new Disney film Tangled. Guess what I voted for?



I have to get my way, or I throw a tantrum. It was okay though, because my lovely friend accepts me for who I am and conceded. VICTORY WAS MINE. We were surrounded on all sides by screaming and giggling children, and I fitted right in. Smile


I can never have too much Disney. I followed up the Disney movie with more Disney. On my Tuesday Tempo run, I plugged my iPod into the treadmill and watched away!DSC07007


I never got to see it when it was out, so I rented it and watched the first bit today! So SAD so far!!

I find balls hilarious. So apparently, I’m not just any child mentally- I’m an 8 year old boy. But I do love balls.


Tropical balls: cashews, dried apricots, coconut + spices made Averie’s way. Seriously, I could live off balls. Winking smile


Before I get too carried away with my list of endless child-like traits (this post would be so long it would break records), I thought I’d tell you about the exciting event I mentioned in the last post!

I’ve booked a place at the talk by a Sports Nutritionist!! Open-mouthed smileI’m SO excited- I can’t wait to hear what he has to say, and hopefully I learn a lot! And obviously, another WF trip is hardly a bad thing either, although I’m not sure my bank balance will agree…! Smile with tongue out

Do you love Disney? What are your favourite Disney movies? The old classics are my faves, like the Little Mermaid and Aladdin. I always wanted to be Jasmine so badly when I was a kid!


Have you ever been to any talks like this one? If so, was it useful I haven’t, so I can’t wait to hear what he has to say!! I think I might bring out my inner geek and make notes…!

  4. Tangled was the best movie I’ve seen in a while! I got to watch Lion King pretty much everyday one summer with the 2 year old I babysat, but we only made it through 20 minutes at a time. Little Mermaid is my favorite cause I wanted to be her when I was little, red hair meant we were twins!

  9. oh, that’s so cool your Whole Foods does stuff like that! I’ve been to talks with sports nutritionists before and it’s all super interesting. I love embracing my inner child at heart sometimes 🙂

  10. I cried when I watched Toy Story 2! Pixar is just fantastic. I teach first grade. I pretend to be more mature than the six-year-olds in my class, but I have my moments.

  11. I love most Disney movies! The Little Mermaid and Beauty and the Beast are my favs! But I also love Bug’s Life,Walle, Up, Finding Nemo (I love Pixar, too!)

    I cried way too much during Toy Story 3 and I was pretty traumatized by that whole incinerator scene…I actually thought Disney was killing them off.

    I love beauty and the beast and basically all the pixar movies. Up! is my favorite!!

  14. I am so with you on Disney!! My sister and I had a Disney Princess soundtrack when we were kids (from like ’97) and we would have our own concerts and sing all the songs. My faves are definitely Lion King (first movie I really cried in) and Beauty and the Beast (best princess!).

This was such a cute post girl! 😛 Well~ppl always tell me that I’m very mature+wise esp. for my age, but I can suddenly turn into a strange little girl who “lives in Ellieland where everything is flowery” (so they say!) haha. I love mulan!!!!!!!!! the story is just genius, and mulan is so heroic~

  18. Hooray for Disney! My fave is Lilo and Stitch, not such a fan of all the princess ones but I love the little mermaid, lion king… And all the pixar ones.

  19. I love Disney! We used to go to Florida every year when I was younger, I miss it so much! Mike hates Disney and always says he’ll never go with me… That will most certainly be changing hehe

  20. Evidence that I am a child: I still love to play on swings. Luckily I look about eleven so I can just about get away with it.

    Bah, I wish I could bake like you. Cooking I am still getting to grips with but baking intimidates me too much…far too many past disasters!

    I still like Disney too: the oldies are the goodies a lot of the time…Snow White especially, although I do like The Hunchback of Notre Dame too. Totally under-rated film for me: the Hellfire song is brilliant.

    I’m a big fan of disney too…but I don’t think I have a fave character. It’s too hard to pick. I haven’t seen Tangled yet—tried to talk my nephew into going but he didn’t fall for it (too much of a girl movie).
    I think I’m a mix of kid and grown-up—I like to keep things simple and enjoy whatever’s going on in the moment (and get excited about small things) like a kid, but I can be a little too serious sometimes too.

  30. I’m such a child at heart! I always snigger at the world “balls” and other such entertainments and toilet humour is always funny!
    Tough call on the Disney but it miiighhht have to be the Lion King- I was the one that cried when Simba’s dad died 🙂
