Chickpea love

Hey friends!! Open-mouthed smile

I started my morning restraining myself from throwing my computer across the room in frustration at all this self-hosted confusingness. It was okay, I took some time out to cool down with some comfort food…

Chocolate covered banana chips are the BEST thing EVER!!

Pure heaven.

…and a planned spin class. Which was again fully booked! This is one popular class!! Fine by me, I just did a gym workout instead. 15 mins weights+45mins sprints on the elliptical, reading of course!DSC07096

I got asked about how I turn my pages 3 times yesterday! Easy peasy you guys! Just pull back the hairband and TURN away! SmileDSC07140

Now you all understand and so there is no excuse not to join me in my geekiness– you know you want to really! Winking smile

So I’ve been LOVING the chickpeas recently! In the form of socca…DSC07075

Apple-cinnamon-coconut breakfast socca bake (adapted from Ashley‘s recipe)

  • 1+1/4c gram (chickpea) flour
  • 1/4t salt
  • 1T maple syrup
  • 1c water
  • 1.5t cinnamon
  • 2T unsweetened applesauce
  • 1/3c sultanas
  • 1/4c unsweetened shredded coconut
  1. Preheat oven to 180C/375F and grease a pan well (I used a 9×9 square)
  2. Combine all ingredients and stir well.
  3. Pour into pan and bake for 30-35 mins until lightly golden.
  4. Cut, top with whatever you want, and ENJOY!!

..and with black cherry fruit spread…DSC07079

SO yummy!!

More chickpea and socca loveage with ANOTHER socca pizza! Yes, that is two days running! Smile with tongue out

Can’t beat it- too easy to make and too darn yummy!!

And finally, the hummus I’ve been promising since The Dawn Of Time:

Basic Hummus recipe (adapted from The Barefoot Contessa)

This is my favourite hummus recipe! I love it and it is so simple to make! If you have the time, or are slightly insane like me, shelling your chickpeas is a worthwhile task! Makes it much creamier, but isn’t necessary. Smile

  • 1 x 16 oz/240g can chickpeas, drained (reserve liquid)
  • 1 tsp salt
  • 3 garlic cloves, minced (You can taste the garlic, so for a more subtle version just go for 1 or 2 cloves)
  • 1/3 cup tahini (Note: If you aren’t a big tahini fan, then try using 1.5 tbsp tahini and 2 tbsp olive oil. Some of my testers preferred this taste-wise.)
  • 3 tablespoons fresh squeezed lemon juice (approx 1 lemons)
  • 2 tablespoons chickpea liquid or water (use more or less to achieve desired consistency)
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper or 1 tsp paprika (optional- gives more spice!)
  • Olive oil for drizzling
  1. Place all ingredients in a food processor and blend until smooth. Season with more salt or spices if desired.
  2. Serve drizzled with olive oil, and ENJOY!!

Chickpeas had to move over come lunchtime though. I move on fast (take note boys!) It was Lentil Time.DSC07144

A Puy Lentil burger (sans mayo+relish) from the Gourmet Burger Kitchen. Went out with the parentals for lunch, and I wolfed down ma burger- very yummy!

Chocolate, pizza, and a burger? The three main food groups of a healthy diet right there, right? Winking smile

Tomorrow I’m going to share something quite personal to me- a project I’m working on at the moment… So stay tuned guys!!

Do you rely on comfort food in times of stress? There’s a reason I keep chocolate on me at all times you know…aside from the fact that I’m addicted, it keeps me stress free and on a constant (sugar) high! Open-mouthed smile

What is one food you’ve been loving lately? Chickpeas, like every day. Chocolate, always. Do chocolate covered chickpeas exist…?

Got any good plans for the rest of the weekend? Tackling my Sunday Hills in the morning, Pancake Sunday, church, then gluing myself back to the computer to try and work out my blog issues!!

Enjoy the rest of the weekend friends!!

  3. Chickpeas are seriously the best – so good in so many forms, hummus, falafel, plain. I’ve been living off bananas lately in oatmeal & cookie form, but those dark choco bananas sound amazing!

Ohhh… I looooove hummus! And I’ve never tried chocolate covered chickpeas, but I have thought of making some – now I must! 🙂

  5. I just made socca today, it is SOOO delicious! Much better than I thought it would be!!

Your hummus looks super, much better than my homemade hummus!

  6. That’s it, I’m buying chickpea flour tomorrow. I need this stuff.
In times of stress, I tend to not eat enough which is really bad. I’m working on this though!
Lately I have been loving avocados, eggplant, and cheese of any kind.
I was going to run a 5k tomorrow, but I decided not to because of my foot issues (which feel so much better!) and because track starts this friday so it’s my last chance to sleep in!

  7. I don’t know if chocolate chickpeas exist, but I intend to find out 🙂

  8. Don’t worry, you’re not alone – I was pulling my hair out for two weeks while I was trying to go self-hosted! If you need help I might be able to answer a question or two, but no promises!
Those chocolate covered bananas look AMAZING!!
And I was seriously wondering about the page-turning, too 😛
Lastly – the socca!! Yes!! Thank you for posting :]

  11. Chocolate, pizza and burger? I think we’re diet sistas! 😀

And I am totally using the headband trick on the elliptical today. I can’t believe I didn’t think of it sooner. I have a tonne of those in my gym bag!

  12. Hope your self hosting is sorted! I’m loving my raw chocy at the moment and my apple addiction is still going strong! At the moment I have the weirdest craving for green juices so I’m drinking lots of them!

  13. You’re such a sweetheart! I barely eat burgers but that one looks da bomb!!

  14. I love chocolate and I love chickpeas, but you might have to convince me on the combo of the two!
At the moment I’ve got a real thing for butter beans as well – they are so good in stews.

  15. Wow that socca bake looks so good. I must have another attempt as my first one was not brilliant !

  16. That socca looks a-mazing! I’d go and bake some now if I wasn’t so certain that I’d eat it all in one go!

  17. hehe, I’ve been wondering how you turn the pages too! I’m just loving Greek yogurt as usual, and Brussels sprouts, mmmm. Good luck on the hill!

  18. Do you rely on comfort food in times of stress?

Um, yes. The problem is that I feel guilty about relying on it so much, which then causes me further stress! So I suppose I need to make peace with being a comfort eater, or just not eat the food. Don’t think it’s a problem in your case though because you look amazing! Seriously, I think your legs are about as long as my entire frame (I must be about 4-5ins shorter than you I think!) Besides which, your portions never look anywhere remotely near excessive, and what other purpose does chocolate serve aside from being a ‘happy food?’

If chocolate covered chickpeas are ever invented, I will be first in the queue to buy them.

My weekend will consist of having my butt kicked by my thesis. As usual!

  19. P.S Thanks for being such an amazing and supportive friend…I hope you don’t mind me calling you a friend even though it’s in the online sense, but I do consider you one every bit as much as a ‘real life’ person,
