Friday Faves!

Hey guys!! Hope you’re having a great Friday!! 😀


If you’re new to the blog (hello!!) or are a reader but suffer from chronic memory-loss like me, then you should know that every Friday I post my Friday Faves!! So here are today’s favourites…


1. Double Oatmeal Raisin Cookie oatmeal…

Oatmeal topped with a crumbled oatmeal raisin cookie and more raisins 🙂

It is perfectly normal (and highly recommended) to include cookies in your breakfast by the way, especially delicious Happy Herbivore ones you made. Little tip there.


2. The reading-on-the-elliptical trick.DSC07290


I don’t remember how I ever managed to last on this machine before discovering this. (And FYI, if you are looking to increase your speed in the 5k or 10k, this book is AMAZING!) Anyway, Friday cross-training was a lunch-hour special: 30 mins elliptical, 15 mins spin bike and weights.


3. Getting started on my March Goals! I am going to be looking around a pretty high-end Virgin Active gym soon and I can’t WAIT to check it out!! Open-mouthed smile1999


I also did two YogaDownload classes (Yoga for Strength and Yoga for Runners).images

It felt SO good to stretch out! My hamstrings were SO tight!!

Vegan Double Chocolate Chip Muffins

These bad boys are moist and delicious, and yet are healthy! Made with spelt flour, sweetened with agave and can be oil-free too!

(Make 5-6 large muffins, depending on how much ‘batter tasting’ you do)

  • 1 cup wholegrain spelt flour + 1/4 cup all-purpose/plain flour (you can use all spelt if you prefer, or a different flour)
  • 1/2 cup agave nectar
  • 1 tbsp wheatgerm or bran
  • 2 tbsp cocoa powder
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 3 tbsp oil or unsweetened applesauce (I used 1T applesauce+2T melted vegan butter)
  • 1 tsp vanilla
  • 1/4 cup non-dairy chocolate chips
  1. Preheat oven to 180C/350F. Spray a muffin pan with non-stick or use liners.
  2. Mix all dry ingredients together except the chocolate chips. Then add the wet and chips and stir in.
  3. Bake for about 10 mins, depending on your oven (my speedy one only took 7!) and then remove, transfer to a cooling rack, and ENJOY!!

That hint was very subtle I know. Subtlety is one of my strong points. As is modesty apparently! Winking smile

  1. You are adorable EMMA!!! I really love all veggies, but like you, broc and spin place first!

    I would have to get a shirt that said, “I love my Cooper” with my hubby as a close 2nd ha ha!!! Shhhh, don’t tell him!

  2. I can’t decide between between spinach and squash for my favorite!! My shirt would have to say “I love dancing” or “I love coffee!!”

  3. I was in the gym the other day (with my beautiful physio :p) and totally saw someone on the elliptical reading a book like that! I immediately thought of you 😀 (then it was eyes back on the fit physio, of course :p)
    Favourite veg? Parsnip or kabocha, I just couldn’t decide.
    Friday Favourite = the parsnip breakfast bake I made today 😀
    And my tishirt would saay…’I love parsnips’. Boring, but true.

    And now that I think of it, I also ate oatmeal for breakfast and lots of chocolate throughout the day 🙂

  6. i eat a ton of spinach add it to absolutely everything! broccolli is a close second thou. to day i have eaten oatmeal for all three of my main meals. cannot fit enough coco peanut buttery oats into my day. x

  7. Mmmmm! I ate a whole head of broccoli two nights in a row too :D!
    I think cookies for breakfast is totally normal and should always be done when cookies are available ;).
    I have no clue what my favorite veggie is… I love them all 🙂

  8. Hmm….Friday Fav: New Running Shoes!

    I love love love cauliflower (and broccoli, spinach, carrots, lettuce….gahh there are too many good veggies!) & if I could have a shirt that said anything it would be I LOVE COCONUT BUTTER.

  9. I finally got notice that my happy herbivore book has shipped I am SO excited!!
    haha, I used to be obsessed with broccoli, too. I’d eat heads at a time with dinner until I finally burnt out on that obsession. Now I’m onto sweet potatoes. I’m getting a little ridiculous 😛

  10. haha I just finished washing about 5 cups of broccoli…
    I’m not gonna eat all of that, of course but I just wanted to say I LOVE broccoli too!!
    I recently figured out you can use stems too. How do you use the stems? (before I just threw them out – what a waste!!)

  11. I’ve been looking for a chocolate chip muffin recipe. I have all these ingredients on hand all the time!
    My friday favorites: Track started today! And my coconut dough balls, which I’ve been craving and giving in like crazaaay.
    My favorite veggie is eggplant. Just steamed, it’s like marshmallows.

  13. Is it weird that my favorite veggie is cauliflower. I love roasted curried cauliflower! I seriously ate an entire bag of cauliflower last week. I love spinach too, but eat is so much I hardly consider it in the running.

  16. Mine has to be mushrooms, even back in the days when I was a meat-eater I would add them to everything. My favourite green is still broccoli though but I do add spinach to everything I can!

    If you make scrambled tofu, mushrooms and spinach go really well mixed in, yum yum!

  17. I love broccoli but so many other veggies too, I don’t think I could choose just one fave. Kabocha squash has to be there and kale and courgette! My Friday fave has to be my home made seitan sausage!

    My fave veg is peppers, followed closely by courgette, beetroot and pumpkin/squash. I think I would have pumpkin on the t shirt though, as I can add it to baked goods too 🙂

    your muffins sound SO GOOD.. i am in SUCH a muffin mood its not even funny !!!!!
    my current favorite are WALNUTS- LOVE THEM straight up.. unsalted!

    My fave veg is probably kale…but that might change at any moment when I eat so much of it that I get sick of it!
    My tshirt would probably say I love avocados….they’re definitely my fave fruit!

    Ah, another book to add to my reading list! I’d much rather read those than my PhD crappyness…perhaps it’ll help me towards that elusive sub-40, though I only have one 10k planned this year…

  25. Can you say Twinsie!!?! All your Friday Faves are TOTALLY favorites of mine too!!! I live for chocolate and oatmeal…people probably think that’s all I eat too;) and reading on the elliptical, straight up chocolate chips and YOGA! all so me:) I’d probably get a “I love Dark Chocolate Reese’s!” shirt…so addicting!
