So I’ve been LOVING the chickpeas recently! In the form of socca…DSC07075

Apple-cinnamon-coconut breakfast socca bake (adapted from Ashley‘s recipe)

  • 1+1/4c gram (chickpea) flour
  • 1/4t salt
  • 1T maple syrup 
  • 1c water
  • 1.5t cinnamon
  • 2T unsweetened applesauce
  • 1/3c sultanas
  • 1/4c unsweetened shredded coconut
  1. Preheat oven to 180C/375F and grease a pan well (I used a 9×9 square)
  2. Combine all ingredients and stir well.
  3. Pour into pan and bake for 30-35 mins until lightly golden.
  4. Cut, top with whatever you want, and ENJOY!!

And finally, the hummus I’ve been promising since The Dawn Of Time:

Basic Hummus recipe (adapted from The Barefoot Contessa)

This is my favourite hummus recipe! I love it and it is so simple to make! If you have the time, or are slightly insane like me, shelling your chickpeas is a worthwhile task! Makes it much creamier, but isn’t necessary. Smile

  • 1 x 16 oz/240g can chickpeas, drained (reserve liquid)
  • 1 tsp salt
  • 3 garlic cloves, minced (You can taste the garlic, so for a more subtle version just go for 1 or 2 cloves)
  • 1/3 cup tahini (Note: If you aren’t a big tahini fan, then try using 1.5 tbsp tahini and 2 tbsp olive oil. Some of my testers preferred this taste-wise.)
  • 3 tablespoons fresh squeezed lemon juice (approx 1 lemons)
  • 2 tablespoons chickpea liquid or water (use more or less to achieve desired consistency)
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper or 1 tsp paprika (optional- gives more spice!)
  • Olive oil for drizzling
  1. Place all ingredients in a food processor and blend until smooth. Season with more salt or spices if desired.
  2. Serve drizzled with olive oil, and ENJOY!!

For me, getting up at 5.45am for a workout was early!! An ‘early’ workout for me usually STARTS at 8am, so it was weird to be done by that time!

I had planned to go to a spin class at 7am, but got there to find it was booked out! Sad smile BUT it was a good thing anyway, because the instructor happened to be my least favourite one today, AND I got some rockin’ speed intervals in instead!

My inner geek

Breakfast this morning involved something totally new: bulgur. Inspired by Katie’s breakfast bulgur, I thought I’d try something different! I’m really trying to experiment with my brekkies this week, and I’m loving it! Open-mouthed smile

Topped with black cherry fruit spread and sultanas

Brekkie Bulgur ‘Rice Pudding’ (inspired by Katie’s recipe)

Serves 1. Tastes like pudding.

  • 1/3 cup prepared bulgur wheat (see Katie’s tutorial for a great how-to)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup non-dairy milk (I used coconut)
  • 2 tbsp (soy) yoghurt
  • 1 tsp cinnamon
  1. Combine the cooked bulgur with the applesauce and milk in a saucepan and heat on low, stirring occasionally like you would oatmeal.
  2. Once the bulgur has absorbed most/all of the liquid and reached desired texture, remove from heat.
  3. Stir in yoghurt, transfer to a bowl, add spices and toppings/mix-ins and enjoy!!

Nutritional Info (excluding toppings/mix-ins): Calories 241, Fat 2.2g, Fibre 9.9g, Protein 8.7g

After breakfast and the library visit, I headed to the gym for my longer easier run of the week (6 miles @ 8 min/mile pace). Gym entertainment:DSC07033

Geek alert. I always get funny looks doing that, but hey, at least I’m not stuck with watching reruns of Bargain Hunters on the gym TVs like everyone else! Smile with tongue out

I then headed off to central London! Being a geek, I went to spend some quality time in Europe’s largest bookstore (Waterstone’s Piccadilly). I almost fainted when I saw the HUGE section of vegetarian and vegan cookbooks!

…and it means I can bake foods with lemon in them! Lemons=summer. So I kidded myself that it was sunny and 30C outside by making some sunny lemon drizzle muffins.DSC06994

Lemon Drizzle Muffins (adapted from Vegan with a Vengeance)

These muffins have only a few spoonfuls of sugar and oil, and are made with wholegrain spelt flour, but taste deliciously sweet and are light and fluffy…

Makes approx 9 muffins

  • 200g/7oz spelt flour (you can use all-purpose if you prefer)
  • 4 tbsp sugar or substitute
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 5 tbsp coconut oil (or other oil, or you could try subbing applesauce for a low-fat option, but I like my healthy fats!)
  • 175ml/6 fl oz milk (I used rice)
  • 175g soy yoghurt
  • 1 tsp vanilla extract
  • Zest from 2 large unwaxed lemons
    For the drizzle:
  • 40ml lemon juice
  • 2 tbsp sugar or substitute
  • 1/2 tsp finely grated lemon zest
  1. Preheat oven to 200C/400F.
  2. Sift together dry ingredients (flour, sugar, baking powder and salt) into a large bowl. In another bowl whisk together the oil, milk, yoghurt and vanilla, then stir in the lemon zest.
  3. Spray/grease a muffin tin. Fill each cup about 2/3 full, depending on how big you want your muffins. Bake for 20-25 mins, then remove from oven.
  4. Combine all the drizzle ingredients in a saucepan over a low heat until the sugar has dissolved. Then brush over muffins with a pastry brush.
  5. Enjoy!!

Kids love muffins, and so do I.

Pancakes, Hills and the Sunday Slob.

I had an awesome Sunday. Sundays are just generally great, a) because there are pancakes involved, b) because it means a hill run, and c) because it means being a Sunday Slob.

a) Pancake Sunday!! Did you know I am officially the worst pancake flipper in the world? Case in point:

Course I scraped it outta the pan and ate it anyway! 😉

Katie’s Red Velvet pancakes (go check hers out- they’re delish and look so much better the way she made them!!), sans the red part because I had no food colouring…

Topped with coconut butter and choccie chips, with PB+J for dippage 🙂

The Katie obsession continued that evening with yet another Banana Bread Muffin For One, topped with raw chocolate pudding as frosting and shredded coconut:DSC06900

The Sunday Pancake theme was carried over to dinner, with a Triple Chickpea plate.DSC06899

Socca (like a chickpea pancake), topped with spinach, nooch and Angela’s delicious crispy chickpea bites, with a side of roasted red pepper hummus. Gotta love those chickpeas!! Open-mouthed smile

b) Hill run!! I have a love-hate relationship with hills, because they totally kick my butt! I did manage to up the speed of the 30 min pre-set hill workout this week slightly, with the first half in 8.00min/mile and the second half in 7.47 min/mileyahooo! DSC06872

7% inline is no joke, and equalled a very sweaty beast afterwards! Chilled out on the elliptical for about half an hour afterwards with Paula Radcliffe.DSC06448

c) Sunday Slob

Slob Example #1: A lie in.DSC06915 When you have pancakes to make, and a church service to get to, a lie-in means sacrifices. And that meant no hair-brushing, no make-up, and not even changing out of my PJ top. Priorities people!!

Slob Example #2: Work procrastination. I settled down with the laptop and vegan instant soup-in-a-mug to tackle some work, and then doing no work at all, and instead bookmarking 1000 more recipes to make.DSC06669

This happens every time. Bad Emma!!

Slob Example #3: Cereal munching straight from the packet. I couldn’t be bothered to make a proper snack after my workout, so the cereal and I got well acquainted on my bed, and got caught in the act by my momma.
