Chickpea love

Hey friends!! Open-mouthed smile


I started my morning restraining myself from throwing my computer across the room in frustration at all this self-hosted confusingness. It was okay, I took some time out to cool down with some comfort food…


Chocolate covered banana chips are the BEST thing EVER!!

…and a planned spin class. Which was again fully booked! This is one popular class!! Fine by me, I just did a gym workout instead. 15 mins weights+45mins sprints on the elliptical, reading of course!DSC07096

So I’ve been LOVING the chickpeas recently! In the form of socca…DSC07075

Apple-cinnamon-coconut breakfast socca bake (adapted from Ashley‘s recipe)

  • 1+1/4c gram (chickpea) flour
  • 1/4t salt
  • 1T maple syrup 
  • 1c water
  • 1.5t cinnamon
  • 2T unsweetened applesauce
  • 1/3c sultanas
  • 1/4c unsweetened shredded coconut
  1. Preheat oven to 180C/375F and grease a pan well (I used a 9×9 square)
  2. Combine all ingredients and stir well.
  3. Pour into pan and bake for 30-35 mins until lightly golden.
  4. Cut, top with whatever you want, and ENJOY!!

Can’t beat it- too easy to make and too darn yummy!!


And finally, the hummus I’ve been promising since The Dawn Of Time:


Basic Hummus recipe (adapted from The Barefoot Contessa)

This is my favourite hummus recipe! I love it and it is so simple to make! If you have the time, or are slightly insane like me, shelling your chickpeas is a worthwhile task! Makes it much creamier, but isn’t necessary. Smile

  • 1 x 16 oz/240g can chickpeas, drained (reserve liquid)
  • 1 tsp salt
  • 3 garlic cloves, minced (You can taste the garlic, so for a more subtle version just go for 1 or 2 cloves)
  • 1/3 cup tahini (Note: If you aren’t a big tahini fan, then try using 1.5 tbsp tahini and 2 tbsp olive oil. Some of my testers preferred this taste-wise.)
  • 3 tablespoons fresh squeezed lemon juice (approx 1 lemons)
  • 2 tablespoons chickpea liquid or water (use more or less to achieve desired consistency)
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper or 1 tsp paprika (optional- gives more spice!)
  • Olive oil for drizzling
  1. Place all ingredients in a food processor and blend until smooth. Season with more salt or spices if desired.
  2. Serve drizzled with olive oil, and ENJOY!!

Chocolate, pizza, and a burger? The three main food groups of a healthy diet right there, right? Winking smile

Friday Favourites

Hey friends!! You know what Fridays mean…Friday Favourites!! And today was a GREAT day, so I have 10 for you!! Open-mouthed smile


1. Early workouts rock. And I mean early. Especially for someone who got to bed at 1am…oops! Embarrassed smile



In the gym at 6.45?! Who AM I?!

For me, getting up at 5.45am for a workout was early!! An ‘early’ workout for me usually STARTS at 8am, so it was weird to be done by that time!

I had planned to go to a spin class at 7am, but got there to find it was booked out! Sad smile BUT it was a good thing anyway, because the instructor happened to be my least favourite one today, AND I got some rockin’ speed intervals in instead!


800m intervals @ 6.31 min/mile pace. Then ellipticalled for half an hour whilst reading my new fave book!DSC07096



2. Clif Crunchy PB bars. The first time I’ve had one- SO good!DSC07099

Can’t believe I’m even THINKING this, but could this rival the chocolate chip flavour…? Surely not…! Smile with tongue out

With broccoli and ‘super melting’ vegan cheese. Apparently, the ‘super melting’ part is a lie, but this was one awesome pizza!! And you can bet I stuffed that whole thing in ma belly, plus *many* squares of sea salt choccie…! Open-mouthed smile

High: Tomorrow!! Early morning spin class, then I am going BACK to my beloved Whole Foods Kensington (3rd time this week!!) but this time I am going with my momma!! It’s only right that she gets to see my second home (and by that, I mean pay for all my goodies…! Smile with tongue out) and I’ll also be taking her to the giant bookstore and maybe to the movies too to see Black Swan…we’ll see! Looking forward to it though! Open-mouthed smile


Going to share some great recipes with you tomorrow too,  which I WOULD have done today, but this post is kinda long enough as it is! So keep a lookout for my Friday Favourites tomorrow!!

My inner geek

Hey friends!! Hope you had a rockin’ Wednesday!! *Edit: This is yesterday’s post! My internet was down last night so I couldn’t publish it!!*


Breakfast this morning involved something totally new: bulgur. Inspired by Katie’s breakfast bulgur, I thought I’d try something different! I’m really trying to experiment with my brekkies this week, and I’m loving it! Open-mouthed smile


Topped with black cherry fruit spread and sultanas

Brekkie Bulgur ‘Rice Pudding’ (inspired by Katie’s recipe)

Serves 1. Tastes like pudding.

  • 1/3 cup prepared bulgur wheat (see Katie’s tutorial for a great how-to)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup non-dairy milk (I used coconut)
  • 2 tbsp (soy) yoghurt
  • 1 tsp cinnamon
  1. Combine the cooked bulgur with the applesauce and milk in a saucepan and heat on low, stirring occasionally like you would oatmeal.
  2. Once the bulgur has absorbed most/all of the liquid and reached desired texture, remove from heat.
  3. Stir in yoghurt, transfer to a bowl, add spices and toppings/mix-ins and enjoy!!

Nutritional Info (excluding toppings/mix-ins): Calories 241, Fat 2.2g, Fibre 9.9g, Protein 8.7g

I exercised my inner geek big time today. Well I am a geek, and usually embrace that. But today was geek-overload…


Geek Example #1: Obsessive running research. I am a running geek. I headed to the library and got a ton more books out on running.DSC07031

Knowledge is power people, knowledge is power…


After breakfast and the library visit, I headed to the gym for my longer easier run of the week (6 miles @ 8 min/mile pace). Gym entertainment:DSC07033

iPod for plugging into the tread and watching Toy Story 3 on, then ‘Performance Nutrition for Runners’ book for the elliptical, using the good ol’ hairband trick:DSC06449

Geek alert. I always get funny looks doing that, but hey, at least I’m not stuck with watching reruns of Bargain Hunters on the gym TVs like everyone else! Smile with tongue out


In true geek style, I put what I’d learned from the first few chapters of that book (which is AWESOME so far btw!) into practice at lunch with a ‘balanced’ meal:DSC07039

Veggies (broccoli+mushrooms): check. Carbs (spelt flakes): check. Protein (‘Cheezy scrambled tofu’ and more nutritional yeast in the spelt flakes): check.


Dessert was Averie’s amazing ‘Raw Vegan Chocolate Chia Seed Pudding’. DSC07047

I did a little happy dance at all the goodness there. GEEK.


Not to mention it tasted SO yummy!!


I then headed off to central London! Being a geek, I went to spend some quality time in Europe’s largest bookstore (Waterstone’s Piccadilly). I almost fainted when I saw the HUGE section of vegetarian and vegan cookbooks!


About half of them!


EVERYTHING I had ever clicked ‘Add to Wishlist’ on Amazon was right there. Being a geek, I counted the vegan cookbooks. 31. New record.DSC07051

I couldn’t leave that section empty handed. Especially when I saw Lindsay’s book! I’ve been reading her blog forever, and I was reminded of it after seeing that Freya had bought it in her post yesterday. So I got it too!  DSC07066

I then went to check out the running section. And fainted in awe. Hence no photo of that gloriousness! I did take a stack of books though and sat on the floor and read them, because I’d already spent all my money. WHAT a geek. And said geek WILL be returning on Friday to drool over the books some more!


The Geek headed next to Whole Foods. Because The Geek can’t manage to not go there after 2 days apart apparently. Only THIS time it wasn’t for food, it was for the Sports Nutrition talk!DSC06952

It was a lovely small  group of us (only 13!) in a little room with comfy chairs. Oh, and they provided food.

Okay, so there’s one thing that you should all know about me: I’m a child at heart.


I love having fun and playing about with my breakfasts. This means fun size comparisons…

I like summer a lot more than I like winter.  It means I can wear cool hats and cute sundresses

…and it means I can bake foods with lemon in them! Lemons=summer. So I kidded myself that it was sunny and 30C outside by making some sunny lemon drizzle muffins.DSC06994

Lemon Drizzle Muffins (adapted from Vegan with a Vengeance)

These muffins have only a few spoonfuls of sugar and oil, and are made with wholegrain spelt flour, but taste deliciously sweet and are light and fluffy…

Makes approx 9 muffins

  • 200g/7oz spelt flour (you can use all-purpose if you prefer)
  • 4 tbsp sugar or substitute
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 5 tbsp coconut oil (or other oil, or you could try subbing applesauce for a low-fat option, but I like my healthy fats!)
  • 175ml/6 fl oz milk (I used rice)
  • 175g soy yoghurt
  • 1 tsp vanilla extract
  • Zest from 2 large unwaxed lemons
    For the drizzle:
  • 40ml lemon juice
  • 2 tbsp sugar or substitute
  • 1/2 tsp finely grated lemon zest
  1. Preheat oven to 200C/400F.
  2. Sift together dry ingredients (flour, sugar, baking powder and salt) into a large bowl. In another bowl whisk together the oil, milk, yoghurt and vanilla, then stir in the lemon zest.
  3. Spray/grease a muffin tin. Fill each cup about 2/3 full, depending on how big you want your muffins. Bake for 20-25 mins, then remove from oven.
  4. Combine all the drizzle ingredients in a saucepan over a low heat until the sugar has dissolved. Then brush over muffins with a pastry brush.
  5. Enjoy!!

Kids love muffins, and so do I.

I love Disney more than life itself. When I met up with a friend at the cinema today, the choice was out of a whole list of serious movies, or the new Disney film Tangled. Guess what I voted for?



I have to get my way, or I throw a tantrum. It was okay though, because my lovely friend accepts me for who I am and conceded. VICTORY WAS MINE. We were surrounded on all sides by screaming and giggling children, and I fitted right in. Smile


I can never have too much Disney. I followed up the Disney movie with more Disney. On my Tuesday Tempo run, I plugged my iPod into the treadmill and watched away!DSC07007


I never got to see it when it was out, so I rented it and watched the first bit today! So SAD so far!!

I find balls hilarious. So apparently, I’m not just any child mentally- I’m an 8 year old boy. But I do love balls.

Today was actually the BEST DAY EVER!! Other than Christmas. And my birthday… Well anyway, it was SO MUCH FUN! Open-mouthed smile

I went to my usual WF first (Kensington- the biggest one!) and then on to the hummus bar, which happened to be a street away from another WF!! I ended up buying stuff from both of course…my poor bank balance…!

Pancakes, Hills and the Sunday Slob.

I had an awesome Sunday. Sundays are just generally great, a) because there are pancakes involved, b) because it means a hill run, and c) because it means being a Sunday Slob.

a) Pancake Sunday!! Did you know I am officially the worst pancake flipper in the world? Case in point:


Course I scraped it outta the pan and ate it anyway! 😉

Katie’s Red Velvet pancakes (go check hers out- they’re delish and look so much better the way she made them!!), sans the red part because I had no food colouring…

b) Hill run!! I have a love-hate relationship with hills, because they totally kick my butt! I did manage to up the speed of the 30 min pre-set hill workout this week slightly, with the first half in 8.00min/mile and the second half in 7.47 min/mileyahooo! DSC06872

7% inline is no joke, and equalled a very sweaty beast afterwards! Chilled out on the elliptical for about half an hour afterwards with Paula Radcliffe.DSC06448

c) Sunday Slob

Slob Example #1: A lie in.DSC06915 When you have pancakes to make, and a church service to get to, a lie-in means sacrifices. And that meant no hair-brushing, no make-up, and not even changing out of my PJ top. Priorities people!!

Slob Example #2: Work procrastination. I settled down with the laptop and vegan instant soup-in-a-mug to tackle some work, and then doing no work at all, and instead bookmarking 1000 more recipes to make.DSC06669

Slob Example #3: Cereal munching straight from the packet. I couldn’t be bothered to make a proper snack after my workout, so the cereal and I got well acquainted on my bed, and got caught in the act by my momma.
