Oatmeal topped with a crumbled oatmeal raisin cookie and more raisins 🙂

It is perfectly normal (and highly recommended) to include cookies in your breakfast by the way, especially delicious Happy Herbivore ones you made. Little tip there.

I don’t remember how I ever managed to last on this machine before discovering this. (And FYI, if you are looking to increase your speed in the 5k or 10k, this book is AMAZING!) Anyway, Friday cross-training was a lunch-hour special: 30 mins elliptical, 15 mins spin bike and weights.

Vegan Double Chocolate Chip Muffins

These bad boys are moist and delicious, and yet are healthy! Made with spelt flour, sweetened with agave and can be oil-free too!

(Make 5-6 large muffins, depending on how much ‘batter tasting’ you do)

  • 1 cup wholegrain spelt flour + 1/4 cup all-purpose/plain flour (you can use all spelt if you prefer, or a different flour)
  • 1/2 cup agave nectar
  • 1 tbsp wheatgerm or bran
  • 2 tbsp cocoa powder
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 3 tbsp oil or unsweetened applesauce (I used 1T applesauce+2T melted vegan butter)
  • 1 tsp vanilla
  • 1/4 cup non-dairy chocolate chips
  1. Preheat oven to 180C/350F. Spray a muffin pan with non-stick or use liners.
  2. Mix all dry ingredients together except the chocolate chips. Then add the wet and chips and stir in.
  3. Bake for about 10 mins, depending on your oven (my speedy one only took 7!) and then remove, transfer to a cooling rack, and ENJOY!!

I loved the fact that the gym was practically deserted for once!! I’d never been on that machine before, cos a) it was/is too scary looking and b) there’s only two, and they are always taken. Apparently though they’re always taken by people in relationships! BodyPump was super quiet too! SCORE for the singleton! Open-mouthed smile

Morning no-brainer

Apparently, I’m not so good in the mornings. I love them and all, but apparently my brain can’t function well…but I did learn three very important lessons today when I did my first ever super-early-pre-church workout!

1. Breakfast means getting up earlier. Especially if you want Pancake Sunday! Otherwise you’ll just have to go with the cereal+banana combo, cos that’s all you’ll have time for…

Despite all that, I had an AMAZING workout, with the my hardest ever treadmill run! I opted for a 30 min pre-set hill session, and it was so hard that after 10 mins I had to reduce my speed to 8 min/mile!DSC06651

The incline climbed up to 7% TWICE, which is way more than I’ve ever done before, and held it there for a few minutes! The second time round I almost died. It was SO awesome, and totally kicked my ass! I was dripping sweat, which combined with the Super Hairy Legs must have made for one helluva attractive sight! And I can’t wait to tackle it again next week! Open-mouthed smileDSC06653

I cooled down on the elliptical for a bit, then sprinted to get changed in time for church. No, I didn’t shower until after the service. So everyone hated me for that, and for *quietly* munching away during the service…

I’m one of those weird cool people that eat all the time. Even when just walking from place to place, I usually have food in my mouth. But next time I think it might be wise for me to swap the CRUNCH bar for a banana or something next time though…funnily enough eating that bar quietly wasn’t very successful…!Smile with tongue out

In other news, I USED MY FOOD PROCESSOR FOR THE FIRST TIME!! Wahoo! After about half an hour of serious confusion, I managed to work out out how to turn it on. Actually, that’s a lie. I got help, and it was as simple as screwing on the bowl properly. What can I say, I’m a bright kid.Light bulb

Hummus in a WW wrap, roasted bnut squash and Eazy-Cheezy Scrambled Tofu

Eazy-Cheezy Scrambled Tofu

  • 1/3 block firm silken tofu (I used Mori-Nu)
  • A few sprays of EVOO oil
  • 1 clove garlic, crushed
  • 1.5-2 tbsp nutritional yeast flakes
  • 1 tsp paprika, or spices of your choice
  1. Put the tofu into a small pan, and chop into small pieces. Spray tofu and pan with oil.
  2. Add everything else, stir, turn up onto a medium heat, and sauté for a few minutes.
  3. Enjoy!!

This was delicious! I loved adding the paprika to give it a little kick! SmileI also went back for more squash, and ended up eating pretty much the whole thing! And it was a big’un too! Feeling just a little over-fibred now! Disappointed smileNo regrets though…too darn YUMMY!DSC06673

If you’re a runner, do you do hill runs? I’ve only started doing them recently, after reading how beneficial they are for your running! But up until last week I was too chicken! Hills scared me (and still do a bit! Smile with tongue out). I now incorporate a hilly run and hill sprints into my schedule.

Also, my Nike Tempo shorts which I love, but rarely wear, because I can’t always be bothered to shave. I do have my priorities you know, and baking+eating cookies > appearance/hygiene. Grossed out much?

I’m not ashamed to admit…

Firstly, a huge congratulations to one of my blogging inspirations Tina @ Faith, Fitness, Fun who gave birth to baby Braedon last night, AND blogged about it! Love this girl, and her baby is beautiful! I want him!!

This morning’s sweat fest was truly awesome. Seriously. I had a great spin class, (although the music wasn’t as good today) with an amazing instructor, who had already taught BodyPump and Aerobics by that point! And still fresh as a daisy…sickening really! Smile with tongue out I followed this up with 35 mins on the elliptical whilst reading Runner’s World to pass the time.

Sadly, a big feature (see here for the discussion on this topic) in Runner’s World today…

It featured quite a few of the races I’m looking at doing this year. However, I’ve decided to limit the number that I would otherwise do, because entry fees aren’t cheap! This is my definite race though (other than the trial in March):royalparkslogo

The Royal Parks half! It’s supposed to be a good one, is close to me, and is a mostly flat course so a speedy time potential! Open-mouthed smile It’s very popular though, so I’ll have to sign up fast when it opens!!

Today at lunchtime my head+stomach were telling me “Green Monster, Green Monster, GREEN MONSTER!!”. So of course, I gladly obliged.DSC05623

It had been way too long. Today’s GM: 3 handfuls spinach, 1 big banana, 1 cup milk, cereal, ice, protein powder, xanthan gum and soya yoghurt, topped with some Wild Berry granola that made up yesterday’s haul. DSC05618

I am not ashamed to admit that later I dove straight back into that packet and munched away happily until I was satisfied.DSC05624

I am not ashamed to admit that I am a cookie dough monster, and that this is my refuel food of choice.DSC05630

I am not ashamed to admit that I do have baking failures, especially with my tendency for blindness that lead to adding a ton more agave nectar than the recipe called for, and ending up with chocolate chip scuffins rather than cookies.

Running, Shopping, Eating

Today was a busy busy day! I began the morning with a tempo run, with my fastest mile at 7.50 min/mile. I’m slowly getting faster! Open-mouthed smile But this little *something* screwed up my run a bit!DSC05113

The heart-rate monitor that comes with the Garmin. It was too big, even on the smallest adjustment, so I tried tucking it in to the band of my sports bra, but that failed too! So a lot of my run was spend hitching it back up until I gave up, stopped, took it off, and ran holding it! Smile with tongue out I’ve tied a knot in it now, so hopefully it’ll be okay next time!DSC05114

I also did 30mins on the elliptical/cross-trainer at the gym, and wore my new top that I bought yesterday in the sales:

I bought the white version a while back, and I love it, so when I saw this blue one on sale I snapped it up! Smile

Asics Gel Cumulus 2 reduced to £30! Open-mouthed smile After trying on thousands of pairs of running shoes, I fell in love with these! Although I don’t need a new pair quite yet, I’m buying them in advance to save some money. But I don’t know if I’ll be able to resist the temptation of wearing them! They’re much better than my current Asics, and are cheaper than they were too!DSC05130

After all that bargain-hunting, dinner was consumed at Nando’s restaurant. I had a ‘portobello mushroom and grilled halloumi cheese burger’ without the halloumi and with a mixed leaf salad on the side.DSC05125

The side salad was huge! It was perfect- I was really craving greens after eating so much junk recently!
