FRIDAY FAVOURITES time again friends!! I love it. I love Fridays. And I love you.


1. Triple Chocolate Oats.


Banana Oatbran with cocoa powder, topped with homemade DCD and a Hot Cocoa Fudge Baby.


I lay down in a state of complete bliss after eating this. HA that rhymes…!

2. Being on a sugar high. Not really an unusual occurrence for me, but it’s just as great every time SmileDSC06797

Yeah, blame these bad boys, and my mum for being a primary school teacher who hands out fruit bars to the good kids instead of chocolate buttons like everyone else does.DSC06822

She knows these make me high, and make me feel like the 8 year old I know I am inside, so she gives me them when I have been good. Daughter points for ironing = fruity bars!! Open-mouthed smile


3. A practise run for my trial! Tomorrow I will be participating in a:parkrun

Parkruns are free weekly timed 5k’s, and there’s one that happens to be on the exact same course as the one my upcoming trial will be on! So I thought I’d do a bit of prep and check it out! Not aiming to break any records tomorrow, but just see what I’ll be up against course-wise in a fortnight’s time!DSC06813

4. Banana hunts. You may or may not know, but I hide bananas. This is so that they can get nice and ripe so I can use them in the kitchen without anyone eating them first. Only problem is, I often forget where I put them… So after a loooong hunt, I opened my airing cupboard and saw

Then I remembered. I put it there yesterday. Darn.

5. Chocolate Chip Banana Bread Muffin for One. DSC06818

After seeing Katie’s post today (I know, I know, I have a crush on her!), realising I had to make that goodness immediately, and then embarking on my hunt, I threw the ingredients together (+ chocolate chips of course!), nuked it the the microwave for 90 secs, and voila!


To show you my gratitude and undying love Katie, I put it on the Peter Rabbit plate I know you like so much.


I love you Katie. I love you Chocolate Chip Banana Bread Muffin. This is actually the best thing EVER, and I WILL be making this every day of my life until I die. Or until I am unlucky on a Banana Hunt.

Reader Request: Dealing with bad runs/workouts

Hey friends!! Serious and uber-cheesy/soppy post today- be warned! Smile with tongue out


Usually, Mondays are my ‘Reader Request’ post days, but in all the Valentine’s excitement, it got side-lined until today! Today’s topic is: How to deal with a bad run or workout. Please note this is all just my own opinion/story! I’m not a professional!


Today, I had a bad run. A very bad run. It made me look like this.


Sweaty and sad 😦


I had a tempo run planned, but felt sluggish and bleugh the whole time, which happens so rarely! I had to keep dropping my pace down. Sad smile


I really let this get to me. I knew exactly what the problem was, I just didn’t know how to tackle it. It wasn’t a lack of good fuelling

…and it wasn’t tiredness. I had gotten a good night’s sleep, and taken two days off from running; a cross-training day on Monday and a full chillax day yesterday. So it wasn’t that either.


I tried to blame it on other things.

“The air-con isn’t working and I’m too hot”

My playlist is too boring, I need to change it up

My ankle/leg/butt/back etc is twinging”.

But it wasn’t any of that.


It was a mental problem.


“Running is 90% mental, the rest is physical.”


When I woke up this morning, I realised I had less than two weeks till my trial. And I panicked. My first thought was “I’m not ready!”, followed by “I’ll never achieve my goal!”. Although I shrugged off these thoughts, the moment I stepped on the treadmill later, they all came flooding back. And it was tough.


But in the last mile or so of my tempo run, I decided to switch off my iPod playlist, and just hit the ‘shuffle’ button and see what happened. And this song came on.

Yes, it’s SUPER cheesy, but amazing 🙂

This was the song that was playing when I ran my first ever mile. It was the song that was playing when I crossed the finish line of my first ever race. All the memories came flooding back.


I remembered why I began running in the first place- to raise money for Cancer Research UK following my aunt’s breast cancer diagnosis. I remembered crying with emotion as I began the race, knowing that I had made a difference. I remember the look on my aunt’s face when she saw the sign I had pinned to my back saying that I was running for her.


Just then, I turned around whilst running on the treadmill, and saw behind me a woman running wearing a Cancer Research t-shirt.


(Excuse the blurriness- she wouldn't stop moving! :P)

I cried. I must have looked completely mad running through my tears but I felt like this was a sign for me. I was inspired.


I then thought about my other inspirations.


My family who love me unconditionally despite the fact that I eat all their food and run up huge grocery bills.165579_1822668409055_1310552062_2065454_2704609_n

My friends who put up with my insanity, always feign interest when I go on about running, and accept my complete inability to ever have a ‘normal’ face in a photo.


My religion, that is always there for me and keeps me grounded.justified_by_faith-788049

My inspiration and heroine in life: Paula Radcliffe, holder of the world record for the fastest marathon run by a woman, in 2:15:25.DSC06752



And most importantly, all of YOU, who inspire me each and every day with your comments, Tweets and amazing blogs to be the greatest person and runner I can be.

So as the last mile or so rolled around, my inspirations pushed me on.

15th February = Valentine’s Day

Did ya not get the memo? Valentine’s Day is today. Well, at least I’m celebrating it today, in good old singleton fashion, aka, with FOOD! Open-mouthed smile I am so excited to share two yummy recipes  with you lovelies today!! Because it’s Valentine’s Day and I love you all.Red heart


Valentine’s Breakfast: Chocolate oatbran with strawberries.


Chocolate + Strawberries = match made in heaven. Cupid must have been involved there.


Valentine’s Lunch: A bowl of chocolate chips with butter.


Are you drooling as much as I am?


HA no, only kidding! That was included in what I made after lunch…here’s a little clue in Spot The Difference form. Possibly the most fun game ever invented.

Oh yes. I made my own chocolate peanut butter, aka Dark Chocolate Dreams!! I searched high and low for a no-added-oil peanut butter recipe, and couldn’t find one, so I just winged it anyway and it worked! Open-mouthed smile


Emma’s ‘Dark Chocolate Dreams’ (adapted from Angela’s recipe)

(Fills one 12oz jar like the one shown above)

  • 2 cups peanuts
  • 1/2 cup chocolate chips
  • 1.5 tsp (vegan) margarine
  • 1/8 tsp salt (optional)
  1. Place your peanuts into a food processor and process on high, stopping to scrape down the sides when necessary. It is done when the peanuts have formed a smooth, oily looking butter. For me, this took 12 minutes (incl. scraping time).
  2. Melt your chocolate chips and margarine. I zapped them in the microwave in 20 sec intervals, stopping once mostly melted. Then stir until fully melted, and add to the processor.
  3. Process the peanut butter and melted chocolate together for a few minutes until fully incorporated and smooth.
  4. Enjoy!! (For storage information see Angela’s recipe)

Amazingly simple!! And so much cheaper than buying the ‘real’ stuff, at least for us Brits anyway! Open-mouthed smile BUT, does it taste as good? The all-important taste test…DSC06717

A HUGE THUMBS UP! Thumbs up Tastes completely decadent, and sooo chocolaty! In case you were wondering, I washed out the DCD jar I finished yesterday, and used it to house my homemade version!



It is official. I love my new food processor more than life itself. But not more than my version of Dark Chocolate Dreams of course! That stuff is my Valentine this year! Winking smile

Actually, again a lil’ white lie. My dinner was a pretty standard un-Valentinesy lentil stew+rice, but dessert makes a meal anyway IMHO, and this one certainly did!


Singleton’s Strawberry Puddin’ (adapted from Animal Aid’s free vegan recipe booklet)

Serves 1, obviously!

  • 1/3 block firm silken tofu (I used Mori-Nu)
  • 4 large strawberries (approx 60g?)
  • 1.5-3 tsp agave (depends on your tastes, adjust as desired)
  1. Combine all ingredients and blend away!
  2. Chill in fridge for as long as possible, or for at least 30 mins.
  3. Top with yummy foods and enjoy!!

My toppings of choice were chocolate chips and a strawberry. Cos it’s Valentine’s Day, and that is what you eat.DSC06732

I would love to try this with other fruits like raspberries, and try adding cocoa powder for a chocolaty version! Open-mouthed smile

It’s that time of the week again, and that means only one thing…Janae-inspired FRIDAY FAVOURITES! Open-mouthed smile


1. Amazing Friday Breakfast!DSC06562

Oat bran topped with one of Katie’s coconut melties, cinnamon, and mixed berries. The meltie melted. It was awesome.

Because, lets face it, they look like beach shorts. And rarely do you feel like you’re on the beach when pounding the streets of London. Maybe with these on though I’ll be magically transported to Hawaii


3. Giving myself a lil’ pedicure. And by this I just mean painting my nails quickly…DSC06572

Attempt #1001 to try to prettify my Ugly Runner’s Feet. At least they look marginally better than they did before…I’ll spare you the ‘Before’ shot though! Smile with tongue out

If I’m going to pay £4.50 for a magazine, I refuse to just read it just once!! Totally worth it though, or at least, that’s what I tell myself when forking out my precious mula…!
