I’m a child at heart

HEYA friends! Smile
rffar

First up, a big THANK YOU to all the offers of UK-US swapsies! To be fair, I’ll make a list of people who offered and then Random Number Generate it, then email you if you were that number. Love you all and thanks for the offers! Open-mouthed smile

grea

Okay, so there’s one thing that you should all know about me: I’m a child at heart.

I love having fun and playing about with my breakfasts. This means fun size comparisons…

I like summer a lot more than I like winter.  It means I can wear cool hats and cute sundresses

132

Emma+big bro aged 5

…and it means I can bake foods with lemon in them! Lemons=summer. So I kidded myself that it was sunny and 30C outside by making some sunny lemon drizzle muffins.DSC06994

Lemon Drizzle Muffins (adapted from Vegan with a Vengeance)

These muffins have only a few spoonfuls of sugar and oil, and are made with wholegrain spelt flour, but taste deliciously sweet and are light and fluffy…

Makes approx 9 muffins

  • 200g/7oz spelt flour (you can use all-purpose if you prefer)
  • 4 tbsp sugar or substitute
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 5 tbsp coconut oil (or other oil, or you could try subbing applesauce for a low-fat option, but I like my healthy fats!)
  • 175ml/6 fl oz milk (I used rice)
  • 175g soy yoghurt
  • 1 tsp vanilla extract
  • Zest from 2 large unwaxed lemons
    For the drizzle:
  • 40ml lemon juice
  • 2 tbsp sugar or substitute
  • 1/2 tsp finely grated lemon zest
  1. Preheat oven to 200C/400F.
  2. Sift together dry ingredients (flour, sugar, baking powder and salt) into a large bowl. In another bowl whisk together the oil, milk, yoghurt and vanilla, then stir in the lemon zest.
  3. Spray/grease a muffin tin. Fill each cup about 2/3 full, depending on how big you want your muffins. Bake for 20-25 mins, then remove from oven.
  4. Combine all the drizzle ingredients in a saucepan over a low heat until the sugar has dissolved. Then brush over muffins with a pastry brush.
  5. Enjoy!!

Kids love muffins, and so do I.

I hate washing up though, and may have left my kitchen in a mess for a number of hours…! Smile with tongue outDSC07004

I love Disney more than life itself. When I met up with a friend at the cinema today, the choice was out of a whole list of serious movies, or the new Disney film Tangled. Guess what I voted for?

watch-tangled-online

(source)

I have to get my way, or I throw a tantrum. It was okay though, because my lovely friend accepts me for who I am and conceded. VICTORY WAS MINE. We were surrounded on all sides by screaming and giggling children, and I fitted right in. Smile

thr

I can never have too much Disney. I followed up the Disney movie with more Disney. On my Tuesday Tempo run, I plugged my iPod into the treadmill and watched away!DSC07007

I never got to see it when it was out, so I rented it and watched the first bit today! So SAD so far!!

I love brightly coloured things. Like this chocolate that was on sale in Whole Foods yesterday:DSC07003DSC07002

I find balls hilarious. So apparently, I’m not just any child mentally- I’m an 8 year old boy. But I do love balls.

DSC06970

Tropical balls: cashews, dried apricots, coconut + spices made Averie’s way. Seriously, I could live off balls. Winking smile

gea

Before I get too carried away with my list of endless child-like traits (this post would be so long it would break records), I thought I’d tell you about the exciting event I mentioned in the last post!

gre

Yesterday when in WF, I was given a leaflet about upcoming events at the store this month.DSC06953

And check out what’s on tomorrow!DSC06952

I’ve booked a place at the talk by a Sports Nutritionist!! Open-mouthed smileI’m SO excited- I can’t wait to hear what he has to say, and hopefully I learn a lot! And obviously, another WF trip is hardly a bad thing either, although I’m not sure my bank balance will agree…! Smile with tongue out

grea

So are you a child at heart, or mature all the way? I have my mature moments…but I think my childish ones overshadow those! Smile with tongue out

rge

Do you love Disney? What are your favourite Disney movies? The old classics are my faves, like the Little Mermaid and Aladdin. I always wanted to be Jasmine so badly when I was a kid!

gers

Have you ever been to any talks like this one? If so, was it useful I haven’t, so I can’t wait to hear what he has to say!! I think I might bring out my inner geek and make notes…!

grea

Have a great day tomorrow lovelies!!

P.S. I am in the process of moving to self-hosted blogging, so if something goes disastrously wrong and my site explodes, you’ll know why! Smile with tongue out

Pancakes, Hills and the Sunday Slob.

I had an awesome Sunday. Sundays are just generally great, a) because there are pancakes involved, b) because it means a hill run, and c) because it means being a Sunday Slob.

a) Pancake Sunday!! Did you know I am officially the worst pancake flipper in the world? Case in point:

DSC06865

Course I scraped it outta the pan and ate it anyway! 😉

Katie’s Red Velvet pancakes (go check hers out- they’re delish and look so much better the way she made them!!), sans the red part because I had no food colouring…

DSC06871

Topped with coconut butter and choccie chips, with PB+J for dippage 🙂

The Katie obsession continued that evening with yet another Banana Bread Muffin For One, topped with raw chocolate pudding as frosting and shredded coconut:DSC06900

Sorry for the Katie obsession. I am not joking when I say you HAVE to try these and her recipes in general because they will send you into a FOODGASMIC COMA.

grea

The Sunday Pancake theme was carried over to dinner, with a Triple Chickpea plate.DSC06899

Socca (like a chickpea pancake), topped with spinach, nooch and Angela’s delicious crispy chickpea bites, with a side of roasted red pepper hummus. Gotta love those chickpeas!! Open-mouthed smile

htra

b) Hill run!! I have a love-hate relationship with hills, because they totally kick my butt! I did manage to up the speed of the 30 min pre-set hill workout this week slightly, with the first half in 8.00min/mile and the second half in 7.47 min/mileyahooo! DSC06872

7% inline is no joke, and equalled a very sweaty beast afterwards! Chilled out on the elliptical for about half an hour afterwards with Paula Radcliffe.DSC06448

DSC06449

Her book is amazing. If you are interested in running, I really recommend it! Open-mouthed smile

gre

c) Sunday Slob

Slob Example #1: A lie in.DSC06915 When you have pancakes to make, and a church service to get to, a lie-in means sacrifices. And that meant no hair-brushing, no make-up, and not even changing out of my PJ top. Priorities people!!

DSC06912

Shhh...they'll never know...

I just didn’t take off my coat. Our secret, k? Winking smile

ytsj

Slob Example #2: Work procrastination. I settled down with the laptop and vegan instant soup-in-a-mug to tackle some work, and then doing no work at all, and instead bookmarking 1000 more recipes to make.DSC06669

This happens every time. Bad Emma!!

Slob Example #3: Cereal munching straight from the packet. I couldn’t be bothered to make a proper snack after my workout, so the cereal and I got well acquainted on my bed, and got caught in the act by my momma.

DSC06908

Oooops!

Must. Get. Every. Last. Crumb…DSC06910

Shameless.

ger

So now I’m off to finish possibly the only productive thing I did all day: washing these bad boys after yesterday’s run.DSC06890

Obviously the most efficient way to do it is in the bathtub. You have to get in there too of course.DSC06883

That’s how I spend my Sundays.

rts

So how did you spend your Sunday? Bonus points for anyone who wore their PJ’s to church too.

ger

Are you a pancake person, and if so, what is your fave flavour or recipe? Please tell me you love pancakes as much as I do, or I will cry.

grea

What are you looking forward to this week? I’m looking forward to tomorrow! I’m going with a friend to the Hummus Bros hummus bar for lunch, and then to Whole Foods! Hopefully I’ll get in a run too, and it’ll be the perfect day methinks! Open-mouthed smile

grera

Hope you’ve had a great weekend friends!!

Reader Request: Dealing with bad runs/workouts

Hey friends!! Serious and uber-cheesy/soppy post today- be warned! Smile with tongue out

grea

Usually, Mondays are my ‘Reader Request’ post days, but in all the Valentine’s excitement, it got side-lined until today! Today’s topic is: How to deal with a bad run or workout. Please note this is all just my own opinion/story! I’m not a professional!

greera

Today, I had a bad run. A very bad run. It made me look like this.

DSC06749

Sweaty and sad 😦

I had a tempo run planned, but felt sluggish and bleugh the whole time, which happens so rarely! I had to keep dropping my pace down. Sad smile

DSC06744

I really let this get to me. I knew exactly what the problem was, I just didn’t know how to tackle it. It wasn’t a lack of good fuelling

DSC06735

Breakfast: Banana oatbran with homemade DCD and jam 🙂

DSC06739

A box of hazelnuts, walnuts and almonds.

…and it wasn’t tiredness. I had gotten a good night’s sleep, and taken two days off from running; a cross-training day on Monday and a full chillax day yesterday. So it wasn’t that either.

gts

I tried to blame it on other things.

“The air-con isn’t working and I’m too hot”

My playlist is too boring, I need to change it up

My ankle/leg/butt/back etc is twinging”.

But it wasn’t any of that.

rergea

It was a mental problem.

grea

“Running is 90% mental, the rest is physical.”

ujdt

When I woke up this morning, I realised I had less than two weeks till my trial. And I panicked. My first thought was “I’m not ready!”, followed by “I’ll never achieve my goal!”. Although I shrugged off these thoughts, the moment I stepped on the treadmill later, they all came flooding back. And it was tough.

grea

But in the last mile or so of my tempo run, I decided to switch off my iPod playlist, and just hit the ‘shuffle’ button and see what happened. And this song came on.

Yes, it’s SUPER cheesy, but amazing 🙂

This was the song that was playing when I ran my first ever mile. It was the song that was playing when I crossed the finish line of my first ever race. All the memories came flooding back.

grea

I remembered why I began running in the first place- to raise money for Cancer Research UK following my aunt’s breast cancer diagnosis. I remembered crying with emotion as I began the race, knowing that I had made a difference. I remember the look on my aunt’s face when she saw the sign I had pinned to my back saying that I was running for her.

htr

Just then, I turned around whilst running on the treadmill, and saw behind me a woman running wearing a Cancer Research t-shirt.

DSC06748

(Excuse the blurriness- she wouldn't stop moving! :P)

I cried. I must have looked completely mad running through my tears but I felt like this was a sign for me. I was inspired.

few

I then thought about my other inspirations.

grea

My family who love me unconditionally despite the fact that I eat all their food and run up huge grocery bills.165579_1822668409055_1310552062_2065454_2704609_n

My friends who put up with my insanity, always feign interest when I go on about running, and accept my complete inability to ever have a ‘normal’ face in a photo.

My inspiration and heroine in life: Paula Radcliffe, holder of the world record for the fastest marathon run by a woman, in 2:15:25.DSC06752

And most importantly, all of YOU, who inspire me each and every day with your comments, Tweets and amazing blogs to be the greatest person and runner I can be.

dsc05968

I. Love. You.

So as the last mile or so rolled around, my inspirations pushed me on.

DSC06746

6.35 min/mile pace 😀

And I got to the place I wanted to be. Smile

fera

Okay, cheesy soppy time over now, you can breathe! Smile with tongue out

gera

So tell me, what gets you through bad runs/workouts? For me, it’s inspiration all the way!

grea

What/who are your inspirations? I was also inspired after reading Katelyn’s post on a similar topic! I felt so amazed at the coincidence that she had written this after the run I’d had!! It’s an amazing post, so read it now!!

ger

I love you all so much! And don’t forget that if you ever need anything or just want a chat, you can email me any time, kay?

htrs

Have a great rest of the week lovelies!!

15th February = Valentine’s Day

Did ya not get the memo? Valentine’s Day is today. Well, at least I’m celebrating it today, in good old singleton fashion, aka, with FOOD! Open-mouthed smile I am so excited to share two yummy recipes  with you lovelies today!! Because it’s Valentine’s Day and I love you all.Red heart

Valentine’s Breakfast: Chocolate oatbran with strawberries.

Chocolate + Strawberries = match made in heaven. Cupid must have been involved there.

htr

Valentine’s Lunch: A bowl of chocolate chips with butter.

DSC06706

Are you drooling as much as I am?

HA no, only kidding! That was included in what I made after lunch…here’s a little clue in Spot The Difference form. Possibly the most fun game ever invented.

DSC06718

DSC06719

Did you spot the difference? Winking smile

kuif

Oh yes. I made my own chocolate peanut butter, aka Dark Chocolate Dreams!! I searched high and low for a no-added-oil peanut butter recipe, and couldn’t find one, so I just winged it anyway and it worked! Open-mouthed smile

htrs

Emma’s ‘Dark Chocolate Dreams’ (adapted from Angela’s recipe)

(Fills one 12oz jar like the one shown above)

  • 2 cups peanuts
  • 1/2 cup chocolate chips
  • 1.5 tsp (vegan) margarine
  • 1/8 tsp salt (optional)
  1. Place your peanuts into a food processor and process on high, stopping to scrape down the sides when necessary. It is done when the peanuts have formed a smooth, oily looking butter. For me, this took 12 minutes (incl. scraping time).
  2. Melt your chocolate chips and margarine. I zapped them in the microwave in 20 sec intervals, stopping once mostly melted. Then stir until fully melted, and add to the processor.
  3. Process the peanut butter and melted chocolate together for a few minutes until fully incorporated and smooth.
  4. Enjoy!! (For storage information see Angela’s recipe)

Amazingly simple!! And so much cheaper than buying the ‘real’ stuff, at least for us Brits anyway! Open-mouthed smile BUT, does it taste as good? The all-important taste test…DSC06717

A HUGE THUMBS UP! Thumbs up Tastes completely decadent, and sooo chocolaty! In case you were wondering, I washed out the DCD jar I finished yesterday, and used it to house my homemade version!

DSC06722

It is official. I love my new food processor more than life itself. But not more than my version of Dark Chocolate Dreams of course! That stuff is my Valentine this year! Winking smile

gtr

So do you think I ended the V-Day celebrations there? Oh no my friends, there’s more! Valentine’s Day Dinner:DSC06724

Actually, again a lil’ white lie. My dinner was a pretty standard un-Valentinesy lentil stew+rice, but dessert makes a meal anyway IMHO, and this one certainly did!

gdf

Singleton’s Strawberry Puddin’ (adapted from Animal Aid’s free vegan recipe booklet)

Serves 1, obviously!

  • 1/3 block firm silken tofu (I used Mori-Nu)
  • 4 large strawberries (approx 60g?)
  • 1.5-3 tsp agave (depends on your tastes, adjust as desired)
  1. Combine all ingredients and blend away!
  2. Chill in fridge for as long as possible, or for at least 30 mins.
  3. Top with yummy foods and enjoy!!

My toppings of choice were chocolate chips and a strawberry. Cos it’s Valentine’s Day, and that is what you eat.DSC06732

I would love to try this with other fruits like raspberries, and try adding cocoa powder for a chocolaty version! Open-mouthed smile

htrs

So I’ve really enjoyed my Valentine’s Day #2! Maybe I should make this Valentine’s month…hmm… And I seriously LOVED reading all your amazing+lovely comments yesterday, and all the awesome V-Day posts that you bloggers wrote! You are all so INSPIRATIONAL!! Smile

gegrea

And coming up soon is some v. exciting news and a hummus recipe! I love hummus almost as much as chocolate and running. Almost.

grea

What things do you love? Erm, chocolate, running, chocolate+running, hummus, and everything in life. Except tea.

gre

Did you have a foodie Valentine’s Day? Eat anything yummy you’d like to share with me and make me jealous of, hmm? I ate lots of chocolate. But hey, what’s new! Winking smile

rgea

Hope you’ve had a great V-Day and enjoy the rest of your week friends!!

Living the Crazy Single Life

Kay, so did anyone else other than Freya, Lindsay and myself NOT realise it was Valentine’s Day today until late yesterday night? Oh the crazy single life I lead! Smile with tongue out

gtbfa

People living the Crazy Single Life simply have the best breakfasts in my opinion.DSC06664

We utilise our mostly empty nut butter jars in amazing ways…

The Before:DSC06663

The After:DSC06683

The kind of work done there could only be achieved by finger. Again, I blame the Crazy Single Life  for that lack of etiquette.

During:DSC06675

Took my oats, stuffed them in said jar, and topped them with something vaguely reminicent of V-Day…

DSC06679

Raspberry is Valentinesy 🙂

…and then some granola too. Because life just isn’t complete without it. Crazy Single or otherwise.DSC06681

Holy Moly this was AMAZING. DSC06682

Special Monday Breakfast = Success.

gtrsa

Living the Crazy Single Life means that you can hit the gym in the evening on Valentine’s Day, and get all schweaty and attractive on this beast of a machine:

DSC06684

The hill climber that made me work HARD!

I loved the fact that the gym was practically deserted for once!! I’d never been on that machine before, cos a) it was/is too scary looking and b) there’s only two, and they are always taken. Apparently though they’re always taken by people in relationships! BodyPump was super quiet too! SCORE for the singleton! Open-mouthed smile

grea

Crazy Single Life means you can not wear make-up and leave your hair in it’s natural state of insanity, even on Valentine’s Day.

DSC06603

No-one will ever see me and judge. Well except anyone who reads this…!

And the best thing about living the Crazy Single Life? No compulsory food sharing.DSC06685

I made Katie’s hot cocoa fudge babies, but left them slightly chunkier for a bit of crunch.  They are total bliss. And trust me when I say that they’re the only babies that are gonna be made tonight as far as I’m concerned! Winking smile

gtrs

So tell me, are you living the Crazy Single Life too, or are you celebrating V-Day with someone special? Despite all these cool benefits, maybe someday I’ll find someone I love enough to share these delicious babies with…they’d have to be pretty darn special though! 😛

hts

What is your favourite thing about Valentine’s Day, or do you hate it? I love it, because I get another excuse to eat a ton of chocolate and make yummy things! A V-Day dessert coming at ya belatedly tomorrow by the way, thanks to the whole forgetting thing!!

htrs

HAPPY VALENTINE’S DAY LOVELIES!! I love you all!dsc05968

Morning no-brainer

Apparently, I’m not so good in the mornings. I love them and all, but apparently my brain can’t function well…but I did learn three very important lessons today when I did my first ever super-early-pre-church workout!

refga

1. Breakfast means getting up earlier. Especially if you want Pancake Sunday! Otherwise you’ll just have to go with the cereal+banana combo, cos that’s all you’ll have time for…

DSC06645

Optimum blueberry and cinnamon flax cereal+coconut milk and banana

Still yummo of course, but nothing beats pancakes on Pancake Sunday.

2. Pack gym bag the night before. That way you won’t be running around in the dark throwing clothes everywhere because you can’t find the capris you live in normally…and then couldn’t find in the end anyway.Nike-Be-Fast-Womens-Nylon-Training-Capris-412628_010_A

(source)

3. Don’t forget to shave your legs. Because you will be forced to wear your Nike Tempos with hairy legs

DSC06656

You can breathe, I'll spare you the close-up! 😛

Ooops.DSC06648

Despite all that, I had an AMAZING workout, with the my hardest ever treadmill run! I opted for a 30 min pre-set hill session, and it was so hard that after 10 mins I had to reduce my speed to 8 min/mile!DSC06651

The incline climbed up to 7% TWICE, which is way more than I’ve ever done before, and held it there for a few minutes! The second time round I almost died. It was SO awesome, and totally kicked my ass! I was dripping sweat, which combined with the Super Hairy Legs must have made for one helluva attractive sight! And I can’t wait to tackle it again next week! Open-mouthed smileDSC06653

I cooled down on the elliptical for a bit, then sprinted to get changed in time for church. No, I didn’t shower until after the service. So everyone hated me for that, and for *quietly* munching away during the service…

DSC06606

I’m one of those weird cool people that eat all the time. Even when just walking from place to place, I usually have food in my mouth. But next time I think it might be wise for me to swap the CRUNCH bar for a banana or something next time though…funnily enough eating that bar quietly wasn’t very successful…!Smile with tongue out

gtre

In other news, I USED MY FOOD PROCESSOR FOR THE FIRST TIME!! Wahoo! After about half an hour of serious confusion, I managed to work out out how to turn it on. Actually, that’s a lie. I got help, and it was as simple as screwing on the bowl properly. What can I say, I’m a bright kid.Light bulb

Dinner was also amazing!!

DSC06670

Hummus in a WW wrap, roasted bnut squash and Eazy-Cheezy Scrambled Tofu

Eazy-Cheezy Scrambled Tofu

  • 1/3 block firm silken tofu (I used Mori-Nu)
  • A few sprays of EVOO oil
  • 1 clove garlic, crushed
  • 1.5-2 tbsp nutritional yeast flakes
  • 1 tsp paprika, or spices of your choice
  1. Put the tofu into a small pan, and chop into small pieces. Spray tofu and pan with oil.
  2. Add everything else, stir, turn up onto a medium heat, and sauté for a few minutes.
  3. Enjoy!!

This was delicious! I loved adding the paprika to give it a little kick! SmileI also went back for more squash, and ended up eating pretty much the whole thing! And it was a big’un too! Feeling just a little over-fibred now! Disappointed smileNo regrets though…too darn YUMMY!DSC06673

gtfd

Are you good in the mornings? I love mornings, because it’s breakfast time (<—best time of the day!!), but my brain doesn’t actually switch on until about mid morning!

gea

If you’re a runner, do you do hill runs? I’ve only started doing them recently, after reading how beneficial they are for your running! But up until last week I was too chicken! Hills scared me (and still do a bit! Smile with tongue out). I now incorporate a hilly run and hill sprints into my schedule.

gre.

And  what are you looking forward to this week? I’m looking forward to experimenting with my processor! A hummus recipe coming up soon! I’ll also be making my own Dark Chocolate Dreams! Open-mouthed smile

Socca Pizza and getting out of The Dark Ages

Howdy friends! Open-mouthed smile

I am SO happy!! I just bought something super exciting…you’ll see later in the post!!

ujydf

I started my morning in the best way- a run! Fuelled by my usual pre-run brekkie:

‘Easy’ run: 4 miles avg pace 7.59 min/mile + 5 hill sprints. So the hill sprints weren’t actually part of the plan, but I saw My Hill…st_andrews_road01 …and couldn’t resist! Smile with tongue out

  • 1 tsp salt

  2. Mix together all ingredients and pour into pan.
  3. Bake for 35-40 mins until golden brown.
  4. Get friendly with your toppings and ENJOY!!

Okay, so my big excitement of the day week month year so far?

Yeah, this is what happens when my momma gets behind the camera...she's not quite so good with technology! 😛

A FOOD PROCESSOR+LIQUIDISER!!DSC06619

Okay, so previously had been living in The Dark Ages, with a 100 year old blender that barely worked…and being on a student budget meant I couldn’t afford it before. BUT pay from a gig I did a while back came through today and I splurged! Open-mouthed smile

Only thing is…DSC06621

WHAT on earth does all THAT mean?! I hate instruction manuals…but I LOVE my new processor!! So preeeety…DSC06630

So if I ever figure out how to turn it on, you’ll see some awesome stuff on here soon! I have billions of recipes and ideas lined up already!! Open-mouthed smile

htrs

Tomorrow, I have such a busy day!! I’m hoping I’ll be able to get to the gym before church too…but I’ve never been good at getting up at 6am…we’ll see how that works out tomorrow! Smile with tongue out

gtrfd

Have you tried socca yet? If you haven’t, you MUST rectify it SOON because it’s not only DELICIOUS but super GOOD for ya! Socca pizza is possibly one of my favourite meals EVER!!

rfge

What was the last exciting purchase you made? TOTALLY this food processor for me!! Also the packet of chocolate chips I bought today was a source of great excitement too 🙂

jkuyf

And do you find it easy to get up really early for workouts? The problem for me is that I get to bed so late, so getting up before 7am means too little sleep!! But I love morning workouts when I can get them in- nothing better than a sweaty morning sesh! Winking smile

tgs

Enjoy the rest of your weekend lovelies!!
